The second sage is the Goron Chief, Darunia. To find him you have to go to Death Mountain and drop bombs to stop the rolling Goron, who is Darunia's son and has your name. He will give you the Fire Tunic and open the doors that will let you into Death Mountain Crater. In DMC, you will find the entrance to the fire temple. Beat the fire temple to unlock Darunia as the second sage.
