Is it safe to cook roast beef from frozen?

Hi, my mum cooks her roast in the pressure cooker from frozen. I usually defrost mine then do it in the same way, but i forgot to take it out of the freezer lastnight. Dont want to give the family food poisoning which is why i'm checking to see if its sage or not. Thanks

What I would do is use the microwave.



If you do it correctly you will be fine. On most microwaves they have auto defrost you probably don't want that. You should have defrost settings. You are thawing beef butt you want to use the fish/seafood setting. You need to stay with it and rotate it often. It works wonders and fast respectively and it won't cook on the outside if you do it right. Good luck. But no way would I cook from frozen. Meat should be cooked from room temp as it is.
Reply:Absolutely safe. If the roast has been handled properly and has not passed its expiration date then there is no reason for concern. No one has gotten food poisoning from your Mum's roasts, have they?

i know it's safe if it is cooked right away after removing but we defrost it first, so that we can conserve more energy.
Reply:no you need to defrost it first you should leave it out over night then cook it
Reply:why wouldn't it be safe. people just defrost it first to save energy so the meat can cook faster. : )

Reply:I don't recommend cooking larger cuts of frozen meats such as a roast or whole chicken in a pressure cooker. Larger`cuts will require increased cooking times of up to one third more than usual, and the results may not be the same when compared to meats that were thawed (or at least partially thawed) and browned before cooking.



If you must cook meat roasts that are frozen:

For frozen Beef or Pork - add 5 minutes to the cooking time for each inch of thickness.

For a frozen chicken, add 1 minute per pound for a whole bird. For frozen Turkey breast, legs or thighs, add 4 minutes per inch of thickness.



Always use a meat thermometer to check for doneness when cooking thick cuts of meat.



If at all possible, thaw it first!

Reply:If your mum has always fixed it that way, and none of you got food poisoning, then I don't see a problem. If you're concerned about the time, call mum and ask how long you should cook it for.



Once you open the pressure cooker, use an instant read thermometer to check for doneness.



I have used the auto defrost cycle on my microwave to thaw roasts without any problems. The only thing I do is after putting the weight in and hitting start, I pause it for a minute to figure how many times to rotate the meat. My micro is old and doesn't have one of those deals that circulates the food. You also need to include turning over to thaw the bottom of the roast so it thaws circumfrentially.
