I'm making turkey breast for Thanksgiving do you wrap the whole turkey with foil or cover the pan with foil?

I'm make 2 turkey breast, what is the best way to roast it? wrap or cover with foil? I am seasoning it with sage, garlic and pepper. Do you rub it with butter? If so I am using light butter. can i get some tips please. This the first Thanksgiving that I'm cooking. I'm a great cook, I just want everything to be delicious!

You can wrap the whole thing or cover the pan. Both will work.

I have to put my two cents in though...may I suggest roasting it in an oven bag? It will keep it juicy and the top will still brown beautifully.

I always get compliments when I roast or bake using the roasting bags.

Also, butter or olive oil for rubbing the skin.



Olive oil seems to give it a more "even tan' and a slightly better skin texture.
Reply:My son and I only like dark meat ...... so I just buy turkey thighs, legs, and/or wings. I cook it in a plastic oven bag. I just season it with sage, salt, %26amp; pepper. I don't use butter. I only use butter when cooking a whole turkey; which is rare. There is sooooo much juice left after cooking that I add it to my stuffing along with the chicken broth
Reply:I WOULDNT SUGGEST USING FOIL AT ALL, I THINK THAT THE COOKING BAGS ARE GREAT, THEY MEAT COMES OUT MOISTER AND SEEMS LIKE IT COOKS QUICKER...IF YOU RUB IT WITH BUTTER I WOULD DO IT PRIOR TO PUTTING THE SEASONINGS ON SO THEY STICK..GOOD LUCK!
Reply:I like putting my finger in between the skin and breast and tease apart and put herb butter or lemon butter -or whatever flavour you like into those pockets.

Doesnt matter really if you put foil around bird or tin-but tends to stick less to meat if around tin
Reply:Make sure you remove the neck and gizzards from the cavity. Roast for 20 minutes per pound at 325 if you have stuffing in the birds or 15 minutes if not.
Reply:We use the Reynolds Turkey size bags to put the Turkey in. It is alot easier cleanup and easier to set for presentation as well as great in helping keep the turkey moist. We use two whole 15 - 18 lb butterball turkeys. My MIL uses butter both on the skin and in the turkey as well as spooning broth over and in the turkey a few times through out cooking. Reply:I have never done just the breast, I always make the entire bird in my smoker. But, my mom always cooked her birds covered, until the last 1/3 to brown.

My cookbook says to cover. Depending on the size of the breasts 4-6lbs cook @325 for 1 1/2- 2 1/4 hours. For 6-8lbs, cook for 2 1/14- 3 1/4 hours.

If you rub with butter, rub before you season. I would probably indirect grill on the BBQ.
