i dont have celery
i dont have french bread- just plain regular sandwich bread
i dont have sage
i dont have pepper- (at least i dont think so...)
i probably cant make a great one with these- but can i make a somewhat good one without these and some subtitutions?
(like celery seeds instead of celery?)
Can I make a good stuffing without some usual ingrediants?
Maybe.
not as good tasting though.
It wouldn't really be stuffing, just, like, bread.
Reply:Sure you can! Here's a basic recipe (I included hot sauce since you don't have pepper but even that can be left out if you don't have it...no problem. Also, a couple of boiled, chopped eggs would be a nice addition if you have eggs on hand):
BREAD STUFFING
1/2 c. butter
1/2 c. minced onion
3 c. boiling water
1/4 tsp. hot sauce
1 tsp. salt
1 tsp. celery seed
1 tsp. thyme
(optional: 2 tbsp. minced parsley or 1 tbsp. parsley flakes)
3 qts. lightly packed toasted bread cubes
Melt butter or margarine in a large saucepan. Add onion and simmer 5 minutes until onion is translucent, then add water and seasonings; stir well. Add bread cubes and toss, making sure bread is thoroughly moistened. Makes enough stuffing for an 8 pound turkey.

PRAWN;-
100g/4oz fresh white breadcrumbs
2 level tsps finely chopped parsley
half a level tsp finely grated lemon rind
50g/2oz peeled prawns, coarsly chopped
half a level tsp salt
25g/1oz butter, melted
milk
1. Combine breadcrumbs with parsley, lemon rind, prawns and salt.
2. Bind loosely with butter and milk.
HAM %26amp; pineapple
100G/4OZ fresh white breadcrumbs
50g/2oz finely chopped lean ham
2 level tbsps finely chopped canned pineapple
2 level tsps finely grated onion
quarter level tsp salt
25g/1oz butter, melted
milk
1. Combine breadcrumb with ham, pineapple, onion and salt.
2. Bind loosely with butter and milk
LIVER %26amp; ONION
100g/4oz chicken or calves liver
1 small onion
40g/1 and half oz butter
100g/4oz fresh white breadcrumbs
half level tsp finely grated lemon rind
1 level tsp lemon juice
2 level tsps finely chopped parsley
half level tsp paprika
half level tsp salt
milk
1. Cut liver into small dice. Chopped onion finly
2. Fry both gently in butter 5 minutes
3. Remove from heat. Stir in breadcrumbs, lemon rind and juice,parsley,paprika and salt
4. Bind loosely with milk
ORANGE %26amp; PARSLEY
1 small onion
25/1oz butter
100g/4oz fresh white breadcrumbs
finely grated rind and juice of 1 medium-sized orange
2 level tbsps finely chopped parsley
half level tsp salt
milk
1. Chop onion finely. Fry in butter very gently until pale and gold
2. Remove from heat. Stir in breadcrumbs,orange rind and juice,parsley and salt
3..If necessary, bind loosely with milk
SAVOURY RICE
1 medium-sized onion
25g/1oz butter
100g/4oz long grain rice
300ml/half pt water
half level tsp salt
1 level tsp crushed rosemary
1. Chop onion finely. Fry very gently in butter until pale gold
2. Add rice. Cook further 1 minute
3. Pour in water and add salt and rosemary. Bring to boil, stirring
4. Lower heat and cover pan. Simmer 20 minutes ( or until rice grains have absorbed all the liquid and are dry and separate).
5. Leave until cold before using
If preferred, half level tsp mixed herbs can be used instead of rosemary.

Reply:I always have a tin of apricots in the pantry for such ocassions - breadcrumbs, onion mixed with the apricot juice and then add the apricots...delicious especially with chicken.

8 cups bread (16 slices)
2/3 cup butter
3/4 cup of finley minced onions
1 cup of chopped mushrooms
1 teaspoon salt
1 teaspoon poultry seasoning
Directions
1cut bread into cubes.
2melt butter in a skillet then add onion and mushrooms to skillet; cook untill onions until transparent; stir in bread cubes.
3Put into a 2.5-3 quart mixing bowl
4When pre-heating oven to 350 degrees; mix in salt and seasoning
5Bake at 350 degrees for 1 hour.
