Orange-cranberry-sage beurre blanc?

I've just re-worked a recipe for an orange-cranberry-sage beurre blanc sauce. What sounds better with this sauce: sea scallops, salmon or roast pork?

Salmon sounds nice, in fact is one of my favourite words.
Reply:the pork sage fits with pork perfectly as does the orange the tartness of the cranberry will work as well,its too much for the scallops and the salmon is not right with the sage
