What seasonings are best to use to take the gamey flavor down a notch in wild quail?

I have about 10 I plan to marinate and cook this weekend. Just curious if anyone has any tips. I am making a standard marinade with white wine, tarragon, rubbed sage, coarse salt, and ground peppercorns.

What seasonings are best to use to take the gamey flavor down a notch in wild quail?
I cook quail this way to get rid of gamey flavor. Boiling 2 quarter of water and put 2 to 4 quails in for couple minutes until boiling again, discard the hot water then wash the birds in cool water to clean. Then I cooked the birds with at least a cup cooking wine for 2 quail and a piece of ginger as big as olive . I believe prewashing by boiling the bird and ginger plus large amount of cooking wine are essential to get the gamey flavor away. You can use any seasoning at the same time as you like.

Reply:your sounds perfect go with it i don't think you even need us you got it! Add some nutmeg that helps too
Reply:Some lemon juice squirted on them, then wrapped in bacon and grilled helps with the gamey taste as well.
Reply:Good quality red or white wine vinegar.
Reply:My father was a hunter and my mother use to soak the gamy flavor out by soaking in milk for a few hours then rinse and marinate.
