I have every recipe but cayenne pepper. Can I substitute another seasoning for cayenne pepper? I have creole seasoning, ground sage and salt and pepper. What else can I use besides cayenne pepper?

Cayenne pepper gives an added kick (hot spice) to the dish.
You can substitute a drop of hot sauce to the dry rub when you mix it, then rub it on the chops.

ROUX
1/4 cup olive oil
1/4 cup flour
1/2 cup red onion -- chopped
ROUX: Add the olive oil to a hot skillet. Add the flour and mix well. Cook over medium high heat until roux starts to brown, then add the onions. Continue cooking until the roux gets a nice medium brown color.
2 butterfly pork chops
1/2 cup white wine
3/4 cup water
1 tablespoon minced garlic
1 tablespoon cajun seasoning
1/2 teaspoon basil
salt and pepper -- to taste
use red pepper flakes for heat.
Add the garlic, seasonings, white wine, and the water. Now add the pork chops and cook over medium heat. Cook on each side for about 10 minutes. Remove skillet from the heat and place in a preheated 450 degree oven for about 15 to 20 minutes or until chops are tender.
